Gluten isn't marked on the menu but, being a seafood bar, most of the stuff is gluten free. When I ate here the manager confidently said the making something gf was no problem and they even had gluten free bread in the freezer. However, he did a terrible job of passing this info onto the guy who was preparing my meal. Thankfully the tables are perched around the kitchen so I was able to watch our chef like a hawk 🦅 First up, he used the regular bread knife to cut my bread rolls open. No cigar I told him and got him to start over with a fresh blade and fresh (frozen) roll. Then I saw him brushing the (gluten) crumbs out of the toaster, so obviously stopped him defrosting my second gf roll in that toaster of cross-contamination. Finally I had to do with a semi frozen roll to accompany my plate of fish. Given that these are Michelin star prices, the level of knowledge and quality of service is far from what I expected. Sadly this is the only place that does serve gluten free food in Geneva airport. You'd have much more fun just buying a giant Toblerone bar from the gift shop instead. Even better, take a 10min walk to the Migros supermarket (located in the train station) before going through security, since they have a few gluten free items scattered throughout the supermarket.
