This is a sit-down, fast-food joint. A bit like Wimpy in the UK. There is a dedicated gluten free menu and they even serve gluten free beer. Result. I had a really tasty oriental chicken for lunch, which was my first taste of Chinese food since being diagnosed Coeliac a few years ago, which was a massive boon for me. The restaurant is accredited by the Spanish Celiac society and your waiter will put down a special gf placemat for you, and your meals are served on blue plates. This is a real nice touch and gave me confidence that they take this seriously and are defensive against accidentaly mixing up orders.
